Ratatouille
Ingredients:
• 1 zucchini (sliced)
• 1 eggplant (sliced)
• 1 red bell pepper (sliced)
• 2 tomatoes (sliced)
• 1onion (finely chopped)
• 3 garlic cloves (minced)
• Olive oil
• Fresh thyme and basil
• Salt and pepper to taste
Instructions:
Step 1: Sauté onions and garlic in olive oil until golden.
Step 2: Layer sliced vegetables in a baking dish, drizzling olive oil between layers.
Step 3: Sprinkle thyme, basil, salt, and pepper.
Step 4: Cover with foil and bake at 180°C for 45 minutes.
Step 5: Remove foil and bake for another 10 minutes until tender.
