Enchiladas
Ingredients:
• 8 corn tortillas
• 2 cups shredded chicken
• 1 cup enchilada sauce (homemade or store-bought)
• 1 cup shredded cheddar cheese
• 1 onion (chopped)
• 1 jalapeño (sliced)
• 2 tbsp olive oil
• 1 tsp cumin powder
• Fresh cilantro for garnish
Instructions:
Step 1: Preheat your oven to 180°C (350°F). Heat oil in a pan and sauté onions with cumin until translucent.
Step 2: Add shredded chicken and half of the enchilada sauce, cooking for 5 minutes.
Step 3: Fill tortillas with the chicken mixture, roll them up, and place in a baking dish.
Step 4: Pour the remaining sauce over the tortillas, sprinkle cheese and jalapeños on top.
Step 5: Bake for 20 minutes until golden and bubbly. Garnish with cilantro.
