Stuffed Bell Peppers with Quinoa & Feta
Ingredients:
• 4 large bell peppers (red, yellow, or orange)
• 1 cup quinoa, cooked
• 1/2 cup crumbled feta cheese
• 1/2 cup chopped spinach
• 1/4 cup sun-dried tomatoes, finely chopped
• 2 tbsp olive oil
• 1 tsp garlic powder
• Salt and pepper to taste
• Fresh parsley for garnish
Instructions:
Step 1: Preheat the oven to 375°F (190°C). Cut off the tops of the bell peppers and remove the seeds.
Step 2: In a bowl, mix cooked quinoa, feta, spinach, sun-dried tomatoes, olive oil, garlic powder, salt, and pepper.
Step 3: Stuff each bell pepper with the quinoa mixture, pressing it down gently.
Step 4: Place the stuffed peppers on a baking dish and bake for 25-30 minutes, until the peppers are tender.
Step 5: Garnish with fresh parsley and serve hot.
