Moroccan Vegetable Tagine
Ingredients:
• 2 tbsp olive oil
• 1 onion, diced
• 3 garlic cloves, minced
• 1 tsp ground cinnamon
• 1 tsp ground cumin
• ½ tsp turmeric
• 1 cup chickpeas, cooked
• 1 sweet potato, cubed
• 1 zucchini, sliced
• ½ cup dried apricots, chopped
• 2 cups vegetable broth
• 1 cup canned tomatoes
• Salt and pepper to taste
• Fresh cilantro for garnish
Instructions:
Step 1: Heat olive oil in a pot. Sauté onion and garlic until fragrant.
Step 2: Stir in cinnamon, cumin, and turmeric; cook for 1 minute.
Step 3: Add sweet potato, zucchini, chickpeas, apricots, broth, and tomatoes. Season with salt and pepper.
Step 4: Simmer for 25 minutes untily vegetables are tender.
Step 5: Serve over couscous or rice, garnished with fresh cilantro.
