Lentil & Sweet Potato Shepherd’s Pie 🥧
Ingredients:
• 1 cup red lentils
• 2 medium sweet potatoes, peeled and diced
• 1 cup vegetable broth
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 carrot, diced
• 1 cup peas
• 1 tsp thyme
• 1 tsp rosemary
• Olive oil, salt, and pepper to taste
Instructions:
Step 1: Cook lentils in vegetable broth until soft (about 20 minutes).
Step 2: Meanwhile, boil sweet potatoes until tender, then mash with olive oil, salt, and pepper.
Step 3: Sauté onion, garlic, and carrot in olive oil until soft. Add peas, cooked lentils, thyme, and rosemary. Mix thoroughly.
Step 4: Transfer lentil mixture into a baking dish, top with mashed sweet potatoes, and bake at 180°C for 20 minutes.
