Zucchini Blossoms
Ingredients:
• 12 zucchini blossoms
• 1 cup ricotta cheese
• 1/4 cup grated Parmesan
• 1 tablespoon fresh basil, chopped
• 1 tablespoon lemon zest
• Salt and pepper to taste
• 1/4 cup flour (for dusting)
• 1/2 cup olive oil (for frying)
Instructions:
Step 1: Carefully wash and remove the pistils from zucchini blossoms.
Step 2: In a bowl, mix ricotta, Parmesan, basil, lemon zest, salt, and pepper.
Step 3: Gently stuff each blossom with the cheese mixture and lightly dust with flour.
Step 4: Heat olive oil in a pan over medium heat. Fry the stuffed blossoms until golden, about 2-3 minutes per side.
Step 5: Drain on paper towels and serve immediately.
